“Salad Club”
A mom recently shared with me that she and a friend have started a “Salad Club”. They each make two different salads, divide them in half and share with each other. This way they don’t have to eat the same salad over and over—brilliant!
The idea came to them as they were talking about a new cookbook (I’ll get back to you with the title) where the author reminds readers that salad doesn’t always mean a bowl lettuce. The cookbook features lots of veggie-heavy salads that feature beans, grains, fruits, veggies and sometimes, different kinds of lettuce. These two women realized that if they got together to prepare & share the salads, they’d have 4 different dishes with half the work while experiencing twice the fun of cooking with a pal.
If you’re thinking “no way my kid will eat salad”, I don’t blame you. That would have been my exact thought when my kids were younger. But—let’s use that idea (sharing food prep with a friend) and apply it to something else. What if you made soups, casseroles or muffins and shared with another family? Or you could simply prep fruits & veggies with a friend while your kids play together.
The idea of sharing the load with another family sounds mighty appealing to me. Maybe give it a try once or twice and let me know how it goes.

Snack Idea: Peanut Butter Overnight Oats
(Notes: No dates? Substitute mashed banana or applesauce. Use whatever type of milk you have)
