How about a no-bake recipe?

No thoughts about feeding kids today, just a fun no-bake recipe to try with your kiddo.

These No-Bake Almond Cereal Bars are courtesy of the Food Network. (I’m modifying slightly)

Ingredients:

  • Nonstick cooking spray (no cooking spray? you can use soft butter to grease the pan too)
  • 3 tbsp butter (margarine also works if you’re going dairy-free)
  • 2 cups mini marshmallows
  • pinch of salt
  • 1/4 cup almond butter (you could sub peanut butter or even Nutella)
  • 1/2 tsp vanilla extract
  • 4 cups crispy rice cereal
  • 1 1/4 freeze dried strawberries (you could try different freeze dried fruits too)
  • 1/2 cup white chocolate chips (sub chocolate or butterscotch chips?)

Directions:

Spray an 8 in. baking pan & a wooden spoon with cooking spray. Melt butter/margarine in a medium pan over medium heat and add pinch of salt. Stir in almond/peanut butter and vanilla. Add the rice cereal & strawberries until fully combined. Turn off the heat and allow mixture to cool for a few minutes. Mix in white chocolate chips. Transfer mixture to baking pan and press into the pan. Allow to cool for about 20 minutes before cutting into 16 squares.
