The Truth About Eggs!

Eggs are a nutritional powerhouse!  Quick to prepare, satiating, and pair with lots of other foods (toast, fruits & veggies!).  

One of my favorite ways to prepare them is by hard boiling them. Sometimes kids tell me that they don’t like hard-boiled eggs—the white part is rubbery, the yolk is dry with a green, smelly ring around it.

So I share my trick for cooking the perfect (non-rubbery) hard-boiled eggs. 

Here’s what I do:

-In a small pan, gently place 6 eggs and fill it with enough water to just cover the eggs. 

-Cover with a lid and put on the stove.  Bring the eggs to a rolling boil and turn the heat off.  Set your kitchen timer for 13 minutes. 

-Get a large bowl filled with water and lots of ice cubes.  When the timer goes off, use a slotted spoon to transfer the eggs to the ice bath.  Let them cool down completely before peeling. 

The egg white should be firm, but not rubbery and the yolk will be bright yellow with a darker orange center—perfection!!
